With just a few simple steps, you and your knife will enjoy a long, happy life together.
The Blade — High Carbon Steel
Keep it clean: After use, wipe the blade with a damp cloth and mild detergent. Dry thoroughly, then apply a light coat of olive oil or food-safe mineral oil to protect it.
Keep it safe: Store it in the box it came in or on a magnetic strip. Avoid tossing it into a drawer.
Keep it cool: Over time, the blade will develop a natural patina—a smoky, mottled surface that acts as a protective layer and tells the story of meals gone by.
The Edge — Sharp and Fine
Keep it honed: Using a honing rod is probably the most important step to maintaining an enjoyable relationship. Honing doesn’t remove material, but it realigns the edge. You can do this as often as you like.
Keep it sharp: Once honing doesn’t bring it back, it might be time for a sharpen. I’ll happily do this for you, or you can contact your trusted local knife sharpener.
The Handle — Range or Custom
Keep it clean: Wipe down with a damp cloth and mild soap. Pay attention to the nooks and crannies. Never put it in the dishwasher!
Keep it dry: Dry the handle thoroughly after washing. Don’t leave it in the sink or sitting in a wet dish rack. This is for the safety of both your knife and your fingers.
